Orzo Pasta Salad

Kapiti cheese- and pasta-maker Alexis Murti, the Curious Cook, is this month's guest post. She shares a family favourite, 'Orzo Salad' with homemade feta

As featured in Sacha Kenny's 'A day in the dairy' MyStory article, Alexis Murti, the Curious Cook, runs workshops teaching cheese- and pasta- making throughout the wider Wellington region. Today she shares her family favourite, tasty Orzo Salad.


This is a recipe that Sarnia, my sister-in-law gave to me a few years back. It often makes an appearance when we have large gatherings at our house as it is tasty, colourful and feeds many. I am looking forward to trying it this weekend with the homemade sheep feta that is currently in my fridge! 


1.5 cups orzo pasta


4 garlic cloves
4 tbsp oil
1 tsp dried oregano
1 tsp droed mint
1 tsp lemon juice


150 grams chopped spinach
1 big handful fresh dill
4 chopped small red onions
5 oz of feta crumbled
10 – 15 diced sundried tomatoes
¼ cup toasted pine nuts
¼ cup chopped olives (optional)



  1. Cook 1.5 cups orzo as per packet instructions. Leave to cool.
  2. Fry 3 to 4 crushed garlic cloves in 4 tablespoons of olive oil until garlic is browned. 
  3. Add 1 teaspoon of dried oregano and mint, ½ a teaspoon of lemon juice and some salt to the oil.
  4. Set aside to cool.
  5. Put cooled, cooked orzo into large bowl, put all other ingredients on top, stir gently then pour on dressing and stir gently until mixed through and season to taste.

Alexis Murti is the Curious Cook and, as a cheese- and pasta-maker extraordinaire, runs workshops throughout the wider Wellington area.

Alexis began making cheese in 2010 after completing a workshop with New Zealand cheese master Mindi Clews.  She then proceeded to run short cheese-making workshops under the Curious Cook name with Mindi's guidance before branching out on her own. In 2012, Alexis was also invited to become a demonstrator for the Mad Millie franchise, demonstrating their products and cheese-making methodology.
